This course focuses on interpreting the nutrition care process to accurately assess, diagnosis, intervene, monitor, and evaluate high-risk patients. Advanced methods of nutrition assessment are explored, focusing on specialized populations and disease states, nutrition focused physical exams, malnutrition documentation, enteral and parentral nutrition support, and caring for the critically ill patient. Topics are designed to prepare students to begin supervised practice experiences in a dietetic internship. Students will also complete a service-learning project with an established community partner.
